We try our hardest to control the things we can control and then to surrender to those things that we have little or no control over. And, over time, we're realizing that more and more of the wine process is best left in the hands of nature and God. I figure they've both got loads more experience at this business than we do!&lt;br /&gt;&lt;br /&gt;O&lt;a href="http://www.mountainspiritwinery.com/uploaded_images/Wine_barrels2-733324.jpg"&gt;&lt;img style="FLOAT: left; MARGIN: 0px 10px 10px 0px; CURSOR: hand" alt="" src="http://www.mountainspiritwinery.com/uploaded_images/Wine_barrels2-730797.jpg" border="0" /&gt;&lt;/a&gt;ur infant wines are still settling, and for the most part, they've settled nicely from the crushing experience of last fall. The red has been transferred into our oak barrels so they can age for about a year. For our purposes, we like the French and the American oak barrels. There's something about these particular oaks that impart such nuanced and balanced flavors to our young wines.&lt;br /&gt;&lt;br /&gt;We've been having a great winter, as far as snow goes! Just fifteen miles up the road is Monarch Ski Area and some of the best downhill skiing and snowboarding the state has to offer. Come on out, strap on those boards, and when you're done zooming down the slopes, stop by the winery (you'll see the signs as you come down from Monarch Pass) and check out our barrels while enjoying a glass. I've always found the sight of the full barrels stacked on top of each other in the winery to be a marvelous picture. My wife, Terry, witnessed an interesting and not uncommon event in our gallery/tasting room, which eventually led to the creation of an entirely new wine. She saw that many times when a couple would visit our gallery next to the Twisted Cork Cafe in Salida, CO to taste our wines, one half of the couple would like the sweeter wine while the other half would prefer something a little dryer. After seeing this minor dilemma replay itself out time and time again, she got the idea to take a cabernet franc wine and blend it with a blackberry wine.&lt;br /&gt;&lt;br /&gt;Mountain Spirit Winery's Blackberry Cabernet Franc was born. It was quickly dubbed the "relationship saver " in that both members of the couple could take enjoyment in the wine. This Blackberry Cab made for an absolutely enjoyable off-dry red wine. And, a little sweetness in the wine made it much more food friendly.&lt;br /&gt;&lt;br /&gt;Our Blackberry Cabernet Franc has won many international medals for several years running. But even if it hadn't, we would know it was a good wine, just from hearing about how many people enjoyed serving it at their dinner parties because of its ability to please a diverse range of wine tastes.&lt;br /&gt;&lt;br /&gt;If you're in the area, stop by and taste this original wine. Or, if you're feeling brave, go ahead and order yourself up a case from the winery. These wines have become a huge hit across the board amongst those who enjoy wine. In brief, ice wines are made from grapes that have been frozen. The sugars and other dissolved solids do not freeze, but the water does. This creates a concentrated, often very sweet wine. These individuals know how to judge a wine expertly, determining every subtle flavor and educating everyone within hearing distance.  They are quick to share their expertise and, all-too-often, to expose one's pitiful lack of wine knowledge. &lt;br /&gt;&lt;br /&gt;Well, a couple of French researchers claim that they have proven that the so-called wine experts know "no more than the rest of us," according to a report in &lt;em&gt;The Times &lt;/em&gt; of London.  This award-winning French study exposes the fact that for all of us, perhaps even more so for these "experts," personal views on wine are based "...as much on color and labels as upon a wine's bouquet and flavor."  I say "even more so" because the study saw that the more "profound" a person's experience with wine, the more that person became blind to what they were tasting and more susceptible to what they thought they should be tasting.&lt;br /&gt;&lt;br /&gt;Here's what I mean.  The study had two parts.  In the first, the researcher invited 54 of Bordeaux's eminent wine experts to sample different bottles of wine.  One of these was a white wine to which the researcher had added a flavorless substance giving it a red color.  Not one of the experts noticed that the wine they were drinking was actually a disguised white! &lt;br /&gt;&lt;br /&gt;In the second part of the study, 57 experts tasted the same bottle of a very average wine twice.  The first time, the wine was labeled as a "high-prestige grand cru" and the second time it was labeled as a "cheap vin de table."  When the experts thought it was a grand cru, they described it as "agreeable, woody, complex, balanced, and rounded."  Whey they tasted the bottle labeled as a simple table wine, they replied that it was "weak, short, light, flat, faulty and with a sting." &lt;br /&gt;&lt;br /&gt;What does this mean for us?  Well, if you're like me, you know what wine you like.  And you like it for very personal reasons.  Sometimes the reason is as simple as the fact that you like the label or you remember visiting that winery last summer or any of a hundred other perfectly good reasons for liking a wine.  Likewise, you probably don't like specific wines for equally appropriate reasons. This time of year when Terry and I are entertaining family and friends, we've often cursed that stubborn cork in the middle of a busy evening (or, even worse, late in the evening when twisting a cap seems infinitely more reasonable than working our complex wine openers...) Here's the article. Hope you enjoy!&lt;br /&gt;&lt;br /&gt;...[This] seems like a good time to reopen the Great Wine Debate of corks vs. screw tops.&lt;br /&gt;&lt;br /&gt;Perhaps you and your sweetheart shared a bottle of wine. Perhaps the bottle-opening ritual went something like this:&lt;br /&gt;&lt;br /&gt;7:30 p.m. - Begin search for corkscrew.&lt;br /&gt;8:00 p.m. - Angrily overturn contents of silverware drawer on kitchen floor in continued search for corkscrew, resulting in nasty cut to bare foot from falling kitchen knife.&lt;br /&gt;8:20 p.m. - Hobble next door to borrow corkscrew from neighbor. When they ask you what happened to your foot, you say it is an "old football injury."&lt;br /&gt;8:40 p.m. - Return to neighbors to ask how corkscrew works. Neighbors notice new bandage on hand from where corscrew has slipped and lacerated an important tendon between your left thumb and index finger. When they ask what happened to your hand, you say you injured it "rock climbing."&lt;br /&gt;8:50 p.m. - With remaining good hand, attempt to twist corkscrew into cork while clasping bottle tightly between your thighs. When your sweetheart asks the reason for your agonized screams, you say the big hole in your leg is the result of "snowboarding."&lt;br /&gt;9:10 p.m. - Dizzy with pain and barely able to retain consciousness, you toss the corkscrew out the window in the general direction of the neighbor's house and limp to the garage, from which you return with a stout, flat-bladed screwdriver and a claw hammer.&lt;br /&gt;9:15 p.m. - Due to your many injuries, you ask sweetheart if she would mind holding the screwdriver while you whack it with the hammer. For some strange reason, she does not accept.&lt;br /&gt;9:25 p.m. - Not willing to accept defeat after all you've been through, you manage, against all odds, to wedge the screwdriver into the remains of the cork. One well-aimed tap of the hammer and...&lt;br /&gt;9:35 p.m. - Begin mopping red wine from walls, floor, ceiling, rugs, drapes, appliances, dog, your cloting, and your sweetheart's clothing. You announce the remaining inch of liquid in the bottom of the bottle would certainly make for a wonderful toast once you fish the bits of cork and glass out of it.&lt;br /&gt;9:40 p.m. - Notice that your sweetheart has gone home.&lt;br /&gt;According to what I've read, some upscale wineries are phasing out corks in favor of simple twist-off caps like the ones used on soft drinks. This seems like a terrible idea to me as it would do away with all the fun of opening a bottle of wine.&lt;br /&gt;&lt;br /&gt;Happy holidays, everyone. Enjoy these long, dark evenings as it allows for extra hours spent contemplating the grape beneath subdued lighting. Not only are Terry and I keeping a close eye on all the wonderful wine we've got in our tanks, but we're also sending out those special brightly wrapped packages to our loved ones, both near and far. We've got our two daughters in state with us here in Colorado. Between the two of them, they've got three young boys who we really enjoy shopping for during the holidays. Also, Terry and I have a son living in North Carolina (who occasionally contributes to this blog). He and his wife Lesley have our only granddaughters. Shopping for them is a totally different experience than shopping for our three grandsons. But it's all a wonderfully fulfilling experience.&lt;br /&gt;&lt;br /&gt;Needless to say, we haven't yet planned our holiday meal. So we thought we'd ask you out there what you're planning for this winter's special feast. And, more importantly for our purposes, what wine do you plan on serving? The holiday feasts are great opportunities to share with our loved ones the wines we've grown to enjoy throughout the year.&lt;br /&gt;&lt;br /&gt;Many of us choose our wine purchases based on what's been recommended to us by our friends and family. I've been a physician for nearly all of my adult life, and I've had many powerful, transformative, and very enjoyable moments as a physician. But being a maker of wine truly has its own rewards- and its own challenges as well.&lt;br /&gt;&lt;br /&gt;Back in 1993 my first batch of wine was sitting in three five gallon glass jugs on the floor of my basement. I'd visit that wine every day, just looking at the beautiful color as they aged. I'd occasionally take a small sample of the wine out, just to experience the difference between a young wine and the wine I was used to drinking. From those early tastes with the wine in those glass jugs, I felt the stirrings of a passion that continues to grow today.&lt;br /&gt;&lt;br /&gt;My son has told me that when he thinks of me working at the winery, he always remembers the time I was working with our Chardonnay. I had emptied some of the wine from the tank into a bucket in order to really inspect it. I swirled the wine around the bottom of the bucket and placed my whole face down close to the wine. Inhaling deeply, I looked up, as my son describes it, with such a peacefully satisfying look that he couldn't help but smile at my obvious enjoyment.&lt;br /&gt;&lt;br /&gt;Then I casually scooped up a bit of the wine with my bare hands and liberally applied it to my face and lips, almost as if I were washing myself in the wine. I hardly remember doing this, but the retelling by my son has stuck with me more than the actual memory. It's funny the things you remember and the things you forget. But my son tells me he'll never forget this Chardonnay baptism.&lt;br /&gt;&lt;br /&gt;There's definitely something about unlocking the door to the winery early in the morning. There's always something exciting happening around the winery, be it new fruit to be crushed, new visitors to the winery, new wine to be bottled, or something entirely different, like entering our wine in competitions. And we're always happy to share the news with you.&lt;br /&gt;&lt;br /&gt;Terry and I are very proud to once again have been asked to enter a selection of our wines into the Jefferson Cup Invitational Wine Competition. This is considered by many to be the Olympics of the American wine industry. Check out this link for information on last year's Cup: &lt;a href="http://www.jeffersoncupinvitational.com"&gt;http://www.jeffersoncupinvitational.com&lt;/a&gt; This is the sixth year of the Jefferson Cup, and it marks the fifth year Mountain Spirit Winery has been asked to compete.&lt;br /&gt;&lt;br /&gt;Doug Frost, the creator of the Jefferson Cup, is one of only three people in the world who has earned the titles of Master of Somellier and Master of Wine. I love that title, Master of Wine. It certainly has a ring to it. He selects worthy wines from across the country to compete in his invitational, whereupon the most sophisticated judges focus their critical tastes and perspectives in an effort at determining which wines are the best America has to offer.&lt;br /&gt;&lt;br /&gt;Merely being chosen to compete is quite the honor, and Terry and I feel truly blessed to again have been chosen. In fact, Mountain Spirit Winery is the only winery from Colorado to have been selected to compete in this prestigous event. We don't know why we keep getting selected, but I guess we're doing something right. In less than a week, we'll be sending off four of our favorite wines: the Duet, the Reisling Chardonnay, the 2004 Limited Bottling Chardonnay, and our Cabernet Sauvignon. These wines will be competing against some of the greatest wineries from across the country. I hope this chilly weather finds you snuggled up with a loved one, or at the very least a nice bottle of wine!&lt;br /&gt;&lt;br /&gt;I thought I'd take this opportunity to tell you about the origins of our award winning Angel Blush wine.  This wine has consistently been our hottest seller as well as our biggest crowd pleaser!  It's a wonderful little wine that creates devotees at every twist of the cork.&lt;br /&gt;&lt;br /&gt;Many years ago, Terry and I were speaking with a major Colorado fruit wine maker.  When asked about his most popular blends, he replied that his apple and pear blend was just phenomenal.  Terry and I promptly went back to our tanks and excitedly created a batch of apple/pear wine.  Upon our first tasting, it was clear.  We hated it!  It smelled bad.  The taste was just awful.  We didn't know what to do.  Would we be forced to pour it all down the drain?  &lt;br /&gt;&lt;br /&gt;Like many things in life, what we thought was a failure was actually a challenge that we were able to turn into a great opportunity.  Terry and I took several samples of the apple/pear wine and added to it different flavoring concentrates from New York. We added cherry essence, strawberry essence, even almond.  No good.  But when we added essence of raspberry, the entire wine was just elevated to a level which neither or us could have hoped.  &lt;br /&gt;&lt;br /&gt;Once we had decided on the correct concentration of raspberry to apple/pear, Terry and I headed back to the tanks.  We added fresh raspberries to the apple/pear wine.  And with that, our Angel Blush was born.  &lt;br /&gt;&lt;br /&gt;Not only was the joy of salvaging our apple/pear wine worth the heartache and the effort, our Angel Blush has been enjoying internation success!  For four years, it has received the international gold medal in the fourth largest wine competition, the New World International Wine Competition. We're very excited at this, our very first blog posting! This whole blog business is so new to us, but we really feel it will be an exciting way for all of us to stay connected and share the joy Terry and I feel as we make the wines of Mountain Spirit Winery.&lt;br /&gt;&lt;br /&gt;Whether you've visited us and enjoyed our wines in the winery or stopped by our gallery and tasted our wines before enjoying a meal at the Twisted Cork next door, we're glad you've decided to visit us out here in cyberspace. I hope to be able to bring you news of all the significant happenings that always seem to keep us hopping here at the winery. Once I get a little used to this blogging format, I want to post images of Terry and me as we make our wine and generally stay busy at the winery. This year's crush has already happened, but there's always action to be found amongst the tanks and usually we've got different wine events worth noting. Besides that, the scenery around here in the winter is just too beautiful to not share with you.&lt;br /&gt;&lt;br /&gt;So, again, thanks for coming by.
